Easy Fish Dinner with Red Pepper and Onion

Instructions:
1 tbsp olive oil
1 lb mild white fish fillets (your choice)
1 red bell pepper, cut into fine strips
1 small red onion, thinly sliced
2 cloves garlic, minced
½ tsp dried oregano
2 tbsp fresh parsley
Salt and pepper to taste

Instructions:
Heat the olive oil in a skillet and stir-fry the red bell pepper until tender. Add the onion, garlic and oregano, stir and cook for a few minutes, until onion is soft. Remove the onion/pepper mix and keep warm.

Place the fish fillets into the skillet and cook each side for about 5 minutes or until cooked through. The fish should no longer be opaque inside and easily flake with a fork.

Arrange the fish on dinner plates and top with the red pepper/onion mixture. Sprinkle with fresh parsley and serve immediately.
